I guess Adobe Zii will release new versions in the futur, and also I know that Adobe are working on native apps for M1 so for now it’s the best solution I got, but it might change soon. Experiencing multiple crashes and lost several hours of work today trying to solve this.

Now try saving again - you should see GIF amongst the options. In the file menu go to Image > Mode and change the mode to RGB or Indexed Color. If you are trying to use the "Save As" command but there is no GIF option in the format drop-menu, then you are using the wrong image mode.
